Hungry consumers in the West have been enjoying a vibrant food truck scene for a long time. In the United States, food truck revenue is up 15 percent over the past five years. Overall, the number of food trucks and carts in the United States grew an astonishing 8.4 percent between 2007 and 2012 according to research done by IBISWorld Inc.
American consumers have apparently developed a taste for the gourmet food truck concept. They are eating all the kimchi quesadillas, short rib empanadas, and bacon covered doughnuts they can get.
